Apricot & Raisin Stuffing

This is a recipe that my aunt does and it’s a good alternative to usual cranberry and onion and sage ones. It’s absolutely delicious and is also so yummy served on its own.
8oz dried apricots, chopped
8oz seedless raisins
5fl oz cider
Soak of all the above together overnight
3oz butter (if you want to make it dairy free, then use oils or a dairy free spread)
Medium sized onion
6oz fresh white breadcrumbs
1 grated orange
Half a teaspoon mixed spice
Quarter teaspoon all spice
1 egg
Salt and pepper for seasoning
Melt 1 oz of butter in a heavy based pan and fry the onion until soft. Then melt in the rest of the butter. Remove from the heat and stir everything together. Bind with the egg and season.
