Greycoat Lumleys has the pleasure of working with one of the world's leading catering companies to supply their staff for their F1 contract.  This is a very exciting opportunity for a Senior Sous Chef to join the team. 

The Senior Sous Chef plays a pivotal role in supporting the Head Chef in all aspects of kitchen operations, including menu planning, food preparation, and staff management. Lead a team of chefs and kitchen staff, ensuring that all dishes meet the expectations of Formula 1’s luxury hospitality clients. This role involves maintaining excellence in taste, presentation, and service under tight deadlines during race weekends, while ensuring adherence to health and safety regulations.

Key accountabilities

  • Assist the Head Chef in managing the kitchen staff, including chefs and kitchen assistants.

  • Lead the team during food service, ensuring all dishes are prepared and served according to the menu and event timeline.

  • Train and mentor junior kitchen staff, ensuring consistency and high performance.

  • Manage kitchen operations in the Head Chef’s absence, making key decisions when necessary.

  • Assist in the creation and development of event-specific menus, considering guest preferences, dietary restrictions, and seasonal ingredients.

  • Ensure that all dishes are prepared to the highest standards of taste, presentation, and quality.

  • Implement creative ideas for new dishes and improve existing recipes in line with the high-end nature of Formula 1 events.

  • Oversee the preparation and cooking of all dishes, ensuring proper portion sizes, flavour profiles, and presentation.

  • Work closely with the Head Chef to maintain a seamless operation in the kitchen, especially during high-pressure service periods.

  • Ensure that all ingredients are fresh, properly stored, and handled according to health and safety regulations.

  • Ensure all food leaving the kitchen meets Formula 1’s high standards for taste and presentation.

  • Conduct regular checks on food preparation areas, ensuring cleanliness, hygiene, and adherence to safety standards.

  • Monitor portion control, waste management, and efficient use of resources.

  • Assist in managing kitchen inventory, ensuring adequate stock levels of ingredients

  • and supplies for race weekends.

  • Coordinate with the logistics team and suppliers to ensure timely delivery of high-quality ingredients.

  • Monitor and control food costs by minimizing waste and efficiently utilizing resources.

  • Ensure that all food is prepared and stored in accordance with health and safety regulations, including HACCP standards.

  • Maintain high standards of cleanliness and organisation within the kitchen, ensuring all team members follow safety protocols.

  • Conduct regular safety inspections and address any potential hazards or issues immediately.

  • Work closely with the front-of-house and event management teams to ensure smooth coordination between the kitchen and hospitality areas.

  • Assist in managing the timing and delivery of food to various hospitality suites, ensuring everything runs on schedule.

  • Communicate with the catering team to ensure special dietary needs are accommodated and guest satisfaction is prioritized.

  • Assist with the breakdown and cleaning of the kitchen after each event, ensuring all equipment and workstations are properly cleaned and stored.

  • Help conduct post-event evaluations, reviewing kitchen performance and suggesting improvements for future events.

Person specification

Essential

  • Extensive experience as a Sous Chef, preferably in a high-end, luxury, or event catering environment.

  • Strong leadership skills with the ability to manage and inspire a diverse kitchen team.

  • Expertise in a variety of international cuisines and modern cooking techniques.

  • Excellent organizational and multitasking abilities, particularly in high-pressure environments.

  • Knowledge of food safety standards and experience working in compliance with HACCP regulations.

  • Strong communication skills and the ability to work collaboratively with different departments.

  • Flexibility to work long hours, weekends, and travel internationally as required by the Formula 1 event schedule.

Salary - £45,000 GPA
